Oranges and some other citrus fruit tend to have small pieces of stem attached where the stem used to be. As the fruit ages, these little bits degrade first. When fresh, they look like a green star. They first lose their green colour, becoming more yellow. Then they shrivel and start losing their shape. They also tend to fall out more as they get older. The skin of the fruit starts showing its age around this time.
When those little nubs are green, you know the oranges are fresh and probably delicious. Flavour degrades well before the skin starts looking obviously old.
