LPT: If you having a planned major life change (such as having a baby, moving), in the weeks beforehand, make a bunch of freezer meals to feed yourself easily, save your sanity and your wallet
Had a kid last year and we made and froze a bunch of meals to keep ourself fed without relying on takeout or using what little time we had to cook proper meals. Much easier. We were fed really well, despite not being anywhere near family with constant deliveries of food.
Some things we made (all vegetarian):
- Burritos that could be easily microwaved for around $1 each. Black beans, veggies, cheese, rice, salsa, egg, veggie chorizo. Mix and match ingredients. Wrap in a damp paper towel, microwave for 3 minutes, flip and another 3 minutes.
- Portions of veggie lasagne. Again, around a $1 per serving. Tossed in the oven from frozen @350F for 45 minutes
- slow cooked chickpeas over toast from Yotam Ottolenghi. Depending on how fancy your eggs are, less than $1 per serving Frozen in quart deli containers. Defrost the night before, reheat in a pot, and used a fried egg in lieu of poaching as it's a hell of a lot easier.
- Shakshuka. Around $1-3 per serving (depending on cost of peppers). Frozen in quart deli containers. Defrost the night before, reheat in a frying pan and poach eggs in the sauce.
- Chili and other hearty soups. Defrost the night before, reheat in a pot. Have with bread or cornbread (Jiffy mix isn't that terrible, but Krusteuz's honey cornbread is pretty damned good, especially for the price).
