In light of the recent askreddit thread involving how to make sandwiches better, I felt this should be said. I went into that thread fully expecting it to be the top comment. It was not. I was sad.
Sounds like it would be super messy at first, but I promise that there is enough oil already in shredded cheese that it does not burn and stick to the pan. Just make your sandwich with whatever type of cheese you want to for the inside. Then put shredded cheese into pan padded as closely to the shape of the bread as possible. If it goes out a little farther, that's fine too. Then you get some extra crunchy bites of cheesy deliciousness added. Then leave it slightly longer than you think you should, lift up sandwich with spatula. Put more shredded cheese into pan and flip sandwich, repeat previous step. Enjoy crispy delicious extra cheesy grilled cheese. Also works for melts with bacon or any other vegetable goodness added. Personally I like to make bacon, jalapeno, pepper jack sandwiches.
