It is always more dangerous to attempt to grab a falling knife than it is to simply wash a knife that made it to the floor.
Same goes with guns, hot pans, and anything else that has a intsantly-damaging end to it.
Just watch where it falls, pick it up after it is back to less-dangerous mode, and wash it.
